Jhonatan Gasca, grew up in his family farm, Finca Bella Vista, and studied ecological agriculture. Him and his brother Johan, were inspired by their friends the Lasso family and focused on quality over quantity. This lot is a great example of an excellently processed high quality varietal.

For years Finca Bella Vista has been a witness of the great coffee production of this gifted land. It differentiates itself by growing several coffee varieties that take the most of this terroir and an excellent cup profile making it so singular. In addition, Gasca is one of the families from Huila that has been keeping their knowledge for the past four generations.

Variety Info: This variety is close to Pink Bourbon in that it is an Ethiopian Landrace variety and not genetically tied to Bourbon. It’s named after the Aji pepper, and is loosely translated to spiced bourbon.

Processing:

  • Manual collection of ripe cherry

  • Cherry oxidation for 12 hours

  • Fermentation in anoxic environment for 24 hours

  • Pulping with little water

  • Fermentation in anoxic environment for 24 hours

  • Wash to remove impurities

  • Sun dried for 3-4 days, mechanical dried in a silo
